Good Morning Muffins

Ingredients
  • MUFFINS
  • ½ Cup Unbleached All-Purpose Flour
  • 1 Cup Whole Wheat Flour
  • ¾ Cup Flaxseed Meal
  • ¾ Cup Oat Bran
  • 1 Cup Brown Sugar
  • 2 tsp. Baking Soda
  • 1 tsp. Baking Powder
  • ½ tsp. Salt
  • 1 Tbsp. Cinnamon
  • ½ tsp. Ground Nutmeg
  • 1½ Cup Carrots, Shredded
  • 2 Apples, Shredded
  • ½ Cup Raisins
  • 1 Cup Walnuts, Chopped or Ground
  • ¾ Cup Milk
  • 2 Eggs, Beaten
  • 1 tsp. Vanilla
  • OPTIONAL ICING
  • 8 oz Package Cream Cheese
  • ¼ Cup Powdered Sugar
  • ½ tsp. Vanilla
Instructions
  1. MUFFINS
  2. Mix together flours, flaxseed, oat bran, brown sugar, baking soda, baking powder, salt, cinnamon, and nutmeg.
  3. Stir in the carrots, apples, raisins and walnuts.
  4. Combine the milk, eggs and vanilla in a separate bowl. Pour this mixture into the dry ingredients.
  5. Stir until all the ingredients are moistened. Do not over-mix.
  6. Fill greased muffin pans or muffin tins ¾ cup full.
  7. Bake at 350 degrees for 15-20 minutes.
  8. OPTIONAL ICING
  9. Combine all the icing ingredients.
  10. Whip the mixture until its creamy and spread over the muffins.
