Ingredients
  • ½ Cup Unbleached All-Purpose Flour
  • 1 Cup Whole Wheat Flour
  • ¾ Cup Flaxseed Meal
  • ¾ Cup Oat Bran
  • 1 Cup Brown Sugar
  • 2 Teaspoons Baking Soda
  • 1 Teaspoon Baking Powder
  • ½ Teaspoon Salt
  • 1 Tablespoon Cinnamon
  • ½ Teaspoon Ground Nutmeg
  • 1½ Cups Shredded Carrots
  • 2 Apples, Shredded
  • ½ Cup Raisins
  • 1 Cup Walnuts, Chopped or Ground
  • ¾ Cup Milk
  • 2 Eggs, Beaten
  • 1 Teaspoon Vanilla
  • OPTION ICING
  • 8 Ounces Cream Cheese
  • ¼ Cup Powdered Sugar
  • ½ Teaspoon Vanilla
Instructions
  1. Mix together flours, flaxseed, oat bran, brown sugar, baking soda, baking powder, salt, cinnamon & nutmeg.
  2. Stir in the carrots, apples, raisins & walnuts.
  3. Combine the milk, eggs and vanilla in a separate bowl. Pour this mixture into the dry ingredients.
  4. Stir until all the ingredients are moistened. Do not over mix.
  5. Fill greased muffin pans or muffin tins ¾ full.
  6. Bake at 350 degrees for 15-20 minutes.
  7. OPTIONAL ICING
  8. Whip together the icing ingredients until creamy and spread over the muffins.
