- 1 Green Bell Pepper
- 1 Red Bell Pepper
- 1 Orange Bell Pepper
- 1 Bunch Green Onions
- 1 Can Corn (Super Sweet Niblets)
- 1 Package Cherry Tomatoes
- 1 Package Frozen Edamame (Seeded)
- A Little Red Onion
- 2 Jalapenos
- 6 Tablespoons Olive Oil
- 6 Tablespoons Vinegar
- 1 Teaspoon Sugar
- 2 Cloves Garlic, Minced
- 1 Teaspoon Garlic Powder
- 1 Teaspoon Oregano
- ½ Teaspoon Cumin
- Chop the peppers, onions and garlic.
- Mix together with seasonings and liquid ingredients.
- Stir and let sit in the fridge for several hours before serving.
