Good Morning Muffins

Ingredients
- ½ Cup Unbleached All-Purpose Flour
- 1 Cup Whole Wheat Flour
- ¾ Cup Flaxseed Meal
- ¾ Cup Oat Bran
- 1 Cup Brown Sugar
- 2 Teaspoons Baking Soda
- 1 Teaspoon Baking Powder
- ½ Teaspoon Salt
- 1 Tablespoon Cinnamon
- ½ Teaspoon Ground Nutmeg
- 1½ Cups Shredded Carrots
- 2 Apples, Shredded
- ½ Cup Raisins
- 1 Cup Walnuts, Chopped or Ground
- ¾ Cup Milk
- 2 Eggs, Beaten
- 1 Teaspoon Vanilla
- OPTION ICING
- 8 Ounces Cream Cheese
- ¼ Cup Powdered Sugar
- ½ Teaspoon Vanilla
Instructions
- Mix together flours, flaxseed, oat bran, brown sugar, baking soda, baking powder, salt, cinnamon & nutmeg.
- Stir in the carrots, apples, raisins & walnuts.
- Combine the milk, eggs and vanilla in a separate bowl. Pour this mixture into the dry ingredients.
- Stir until all the ingredients are moistened. Do not over mix.
- Fill greased muffin pans or muffin tins ¾ full.
- Bake at 350 degrees for 15-20 minutes.
- OPTIONAL ICING
- Whip together the icing ingredients until creamy and spread over the muffins.
